The Pasta Factory - Restaurant “In Via Roma” was built on the ruins of the village ancient bakery. Nowadays it is a boutique selling fresh pasta rigorously made of wheat Senatore Cappelli.
Since are the places adjoining, you may both buy the fresh pasta inside the small factory, and decide to eat it in the restaurant, as the chef and its welcoming staff will cook it on the spot. You may choose the pasta recipe which you like most among the following: whole wheat orecchiette with turnip tops, barley macaroni with tomato sauce and ricotta forte, small durum wheat lasagne with black cabbage on a pecorino fondue, pappardelle (wide strips of pasta) with horse meat sauce and some flakes of pecorino, ravioli with asparagus tips and cardoncelli (local mushrooms).
The second courses are delicious as well: grilled meats with a few condiments, so you can taste the original flavour of the row materials the restaurant cooks (only tracked meats from selected farms). In order to combine the meals with the best wines of Salento, you will be given an impressive list of selected local labels.
On request, you may attend the cookery courses held by the chef, where you will learn to prepare the traditional home-made fresh pasta and make the best recipes of the local gastronomy. Moreover, you may enjoy the themed dinners and wine tastings frequently organized by the owners and the staff.
