The Cofano family has been producing and selling their traditional cakes for around 60 years. Their products include their handmade cupeta, their mustazzoli, their sugary pralines, their almond paste cakes – which are traditionally lamb-shaped for Easter and fish-shaped for the Christmas holidays – and their ricciole – baked almond cookies, decorated with candied cherries or coffee beans.
As opposed to their fellow cupeta specialists in San Pietro in Lama, who are traditionally itinerant, Luca Cofano has recently opened a small shop in which only handmade delicacies like the white torrone sweet, the mandorle rice – almonds covered with sugar frosting – the carbone di zucchero – a sugar candy resembling a lump of coal, usually eaten for epiphany – and the local bonbons are sold.
