Located on the road connecting San Cesario to Lecce, Caseificio Cassone is a dairy factory whose workers jealously protect the secret behind the artisanal production of their trademark mozzarellas made from cow’s milk and daily stretched and kneaded through the traditional “stecca e mastello” technique. They apply the same passion and respect to the other dairy products you can find in their factory, such as their fresh soft ricotta, stracciatella, burrata, primo sale – Italian for ‘first salt’, since it’s the sheep milk cheese at the early stages of maturation – their giuncata – a type of soft curd cheese – and their scamorza cheeses, both fresh and smoked. Along with these delicacies, you will also have a wide range of local charcuterie products from which to choose. You can also buy other traditional culinary products, such as wine, fruit compotes and sottoli – vegetables packed in olive oil.
