Salento is characterised by the presence of vast expanses of olive trees (most of which are age-old), representing a precious primary resource for the local economy since antiquity. The several oil mills spread throughout the region are clear proof of it: an important example of “archaeology of work”, a heritage of a great cultural and historic value.
An usual though fascinating tour, this one allows you to discover the places where olive oil is still produced as it was in the past, by visiting the spectacular underground olive mills – true time witnesses and knowledge repositories. These underground buildings were originally dug out of the rock, and then abandoned in the XVIII century for sanitary reasons.
Actually, these buildings are less known to the public though they are evidence of a past marked by great moments of development and growth for the territory. The aim is thus to promote some of the most beautiful places in Salento, as well as the ancient factories of oil, which need to be preserved.
Not to miss:
- the underground oil mill Astore within the namesake manor house in Cutrofiano’s countryside;
- “Il trappeto” (dialect word for oil mill) along an ancient Giuggianello’s road;
- “Il trappeto della corte” (the oil mill in the courtyard) in Minervino, one of the largest an most ancient oil mills of Salento together with “Trappitello del Duca” (the duke’s small oil mill) in Giurdignano;
Let us move to Cannole, where you will see the underground oil mills situated within the manor house of Torcito.
The tour then goes on up to the heart of Grecìa Salentina (Greek Salento): from Calimera, with its underground oil mill called “Rescio”, to Martignano, Zollino and Sternatia.
Do not miss to visit Cooperativa Agricola San Giorgio in Carpignano Salentino, which uses the most modern procedure for extracting the best extra-virgin olive oil, and where you will have the chance to taste the authentic flavour of a tradition that has been handed down for centuries.
